What is Taker?

The trader who crossed the spread and removed liquidity. Pays the higher fee, and moves the price.

The taker is the one who crossed the spread because waiting was worse than paying. Takers move price — every tick you see is someone deciding that certainty about time was worth giving up certainty about price. They pay the higher fee for the privilege.
